Description The house was the old Hakosa's Store. It is presently occupied by Mrs. Takeguchi, who with her husband, made and sold tofu. The coffee drying platform is no longer there and the area is now covered with coffee trees. The men in the picture are probably some of the Hakoda boys (there were seven of them). "Showing the family size pulper and drying shed, with the farmer's home in the background. The fresh coffee cherry is pulped, then fermented, and then spread in a thin layer on the drying platforms which have roofs mounted on rollers. These can be rolled off during the day and quickly rolled back again in case of rain or at night. With this simple equipment, the grower converts his coffee cherry into dry parchment, thus increasing the value of his product, saving freight, and keeping his pulp at home to return to the soil.
